This point about presence is one I’ve not seen made before about ‘mise en place.’ I’ve always focused on the preparation part, and how that then makes it possible to do great work (under press, amidst chaos, etc.) The idea that you can set yourself up for being present is quite enticing.

We could debate whether such atmospheres are a good thing, and what responsibility we each have to cultivate ours. But first, it’s just interesting to study it and wonder about it.

Yes, absolutely. There are levels to this art of being switched on. First is to be come self-aware enough to notice that you are generally off. Second, being able to notice in the moment when you are off. Third, being on. Fourth—and this makes the first three seem easy—being truly happy when others around you are switched off.
